Rhubarb Apple Dessert with crunchy topping!

 Ever had an apple pie on your mind and it was rhubarb season?! Ever wondered how to combine those things and stay low sugar – low fat – and high in protein?!

Here you have it all in one!

The natural sweetness of warm softened apples compliment that slightly bitter-sweet taste of rhubarb in such a great way. You may think the crumbles are just decoration. But hold up – that topping though.. so amazingly flavorful!

With only a few simple ingredients you can create a crispy topping which is rich in protein thanks to the protein powder (optional) and the chia seeds. Coconut & almond flour provide healthy fats and complex carbs.

There is no additional sugar! All the sweetness here is from the fruit itself and that little bit of honey we add. Super simple and delicious – a must try for all healthy dessert lovers out there!

One of the best things about this dish: you can store it in the fridge for a few days. Just heat up your portion in the microwave for a minute and it tastes like fresh out the oven again!

Instructions
  1. Preheat oven to 180°C (350°F)
  2. Cut apples and rhubarb in large chunks and put in sauce pan over medium heat for about 10-15 minutes until it has softened. Add dash of lemon juice.
  3. Meanwhile prepare crumbles by combining all the other ingredients (honey, protein powder, almond flour, coconut flour, chia seeds, cinnamon).
  4. Mix with fingers until all crumbled up.
  5. Place apples & rhubarb in 8x8 baking dish and top with crumbles.
  6. Bake in oven for 15-20 minutes or until surface has browned.
  7. Serve warm with low fat whipped cream and top with sliced almonds and dark chocolate sprinkles. YUM!
